RECIPE: Oven Baked Sweet Potato Toast

This recipe makes for the perfect breakfast or brunch dish because it’s packed with protein and healthy fats that will keep you full all morning long!

Losing weight can be hard, and it’s easy to fall into a breakfast rut. But, I don’t want you to get bored with the same food over and over again. That is why I created this dish - sweet potato toast! Sweet potatoes are high in fiber and vitamins, so even if you eat multiple servings of them per day, your body will thank you for being healthy. They are also naturally low in fat and calories which makes them the perfect choice to start your day off right!


Oven Baked Sweet Potato Toast


Ingredients List:


The combination of sweet potatoes, avocado, and eggs is a match made in heaven.

  • 2-4 sweet potatoes

  • Coconut oil spray

  • Salt

  • Cinnamon

  • Optional toppings: avocado, nut butter, apples, bananas, hummus, carrots, poached eggs, arugula, etc.

Directions:


Kristy’s Meal Prep Tip ~ Make a batch of sweet potato toast, and store in an airtight container. When ready to reheat, simply place the potato slice in the toaster and add toppings when heated.

  1. Heat oven to 350. Line a baking sheet with parchment paper.

  2. Wash each sweet potato well. Keeping the skin on, cut the bottom and top of the potato off, so each potato is flat on the end.

  3. Using a sharp knife, or mandolin, cut the sweet potatoes into thin slices (about 1/2”).

  4. Spray both sides of potato with coconut oil. Lay potato slices on the baking sheet, making sure they are not touching.

  5. If desired, sprinkle the potato slices with salt or cinnamon.

  6. Bake for 15-20 minutes, turning halfway. Potatoes should be tender, but not soft.

  7. Top with desired toppings and serve hot.
