If you've never roasted delicata squash, you are in for a treat! When this pretty fall squash starts to make its appearance at the supermarkets, I'm excited to get my hands on it! I've been known to make a special trip just for them.
Delicata squash has all the fall flavors without all the fuss. It has a sweet, velvety flesh that caramelizes beautifully in the oven (especially when you use olive oil). This creamy, sweet squash will most definitely take your meal up a notch, and impress your friends and family. Consider this recipe your new show stopping side dish.
Simple Roasted Delicata Squash
Ingredients
1 delicata squash
1 TBSP olive oil
salt
Directions
Preheat oven to 375°F and line baking sheet with parchment paper.
Cut the squash horizontally so you have 2 "boat" halves.
Slice one half into 1.5" moons, leave the other whole.
Mix the sliced half moons with olive oil, brush oil on the other half
Spread the squash moons on the lined cookie sheet (make sure they are not touching), leave the other leaf whole, skin side down. Sprinkle with salt
Bake for 40-45 minutes (skin should be soft to the touch).
This recipe is delicious hot from the oven, but you can also prep it a few hours in advance!
Of course, this roasted delicata squash recipe is a yummy addition to an everyday dinner too. Pair it with a protein of your choice, and your meal is complete.
